There is nowhere more fish available than in the Algarve. Not only Bacalhau (air-dried cod), for which there are more than 365 recipes (for each day of the year), but many tasty and partly unknown species.
Sardines
Sardines are served with boiled or jacket potatoes. The tasty fishes are NOT disembowelled, and grilled only with coarse sea salt. Serve with a salad of tomatoes, cucumbers and onions or a salad garnish as in the picture.
